Today, I wrote a guest post for the AMAZING souporsaladblog

I swear, I wish the idea for this blog had been mine. It’s awesome. Everything soup or salad? Yes please. I can personally vouch for many recipes on this site, most recently, I tried the Spicy Shrimp & Noodle Soup, which was incredibly delicious and permanently added to our recipe box.

Also? The site is run by one of my best bloggy friends, Amy, so you know it’s good stuff.

Go now to read about my Tomato Artichoke Pasta Salad. It is a tried and true recipe. One of my favorites, and totally customizable. You won’t be disappointed.     I too received this recipe card at my Weight Watchers meeting many years ago. I made it right away back then, and have been making it ever since. I have to double the recipe for my family of 5, and I also add extra ingredients to jazz it up some. I grow my own herbs, so along with the wonderful fresh basil I also add some snipped fresh chives (could use sliced scallions as well), a little minced garlic, fresh lemon zest, salt, pepper, and a drained can of garbanzo beans for some extra protein. When serving, I drizzle with a little additional extra virgin olive oil and sprinkle with toasted pine nuts. Delicious and even better than the original recipe!
